Sunday-Sunday, Peanut Butter Funday...

It's Sunday, I'm feeling fat and lazy, ate a gigantic cinnamon roll for breakfast --- appetizer before eggs and chorizo. I brought my breakfast home, can you guess what my lunch is going to be?

Anyway, I often have a craving for something sweet and something simple, but don't want to run to the store, don't want to go to great effort, don't want to have a mess to clean up. If you ever have the same hankering, I've got a great suggestion:

Flourless Peanut Butter Cookies!

 These are super easy to make... you only need four common ingredients, some sea-salt, and ice cold milk!

Flourless Peanut Butter Cookies

Ingredients
·      1 cup organic chunky peanut butter
·      1 cup powdered sugar
·      1 egg
·      1 tsp baking soda
·      Sea salt
Flourless Peanut Butter Cookies - Dusted with Cayenne

Method
Preheat oven to 350f. Combine all ingredients in bowl and mix thoroughly.  Roll into walnut sized balls. Place on baking sheet and criss-cross with fork. Sprinkle a few pieces of sea salt on each cookie (alternately – add a piece of chocolate to each cookie, or dust with cayenne, or fennel seeds, etc). Bake for 12 minutes or until lightly browned. Cool on baking sheet for two minutes before moving to cooling rack.

Enjoy with a big glass of cold milk!
