A little turkey chat...

I've been touting TAJ Farms all week and encouraging you to consider going heritage turkey this year!

I have two of these birds ready for cooking in my kitchen... I will continue to blog about them - first step is to research the perfect brine solution! Because these birds are raised naturally with no antibiotics, growth hormones, or processed with any saline solutions after butchering, they benefit from brining to keep them moist and enhance their wonderful robust flavor.

It seems odd, but actually buying these beautiful heritage birds for holiday dinners helps save them from extinction. And trust me, with all the birds raised for Thanksgiving and Christmas, these birds have a FAR superior life--if you don't believe me...
