November means one thing... TIME FOR COOKIES

And now about those cookies...

We are going to start a new Loft tradition this year. Each year downtown Palm Springs has a Festival of Lights parade... it's beautiful and attracts legions of people all gathered along the sidewalks to view the dazzling display of floats. So this year we decided to host our first annual LOFT Cookie Exchange party after the parade. Hoping lots of people bring their favorite cookies and we all end up with a fantastic collection of treats!

Hosting a cookie exchange party is a great way to stock up on holiday cookies without having to bake for days and days and days, regardless of whether or not you have a parade in your town; just send out the evite, whip up some eggnog (recipe coming soon), wassail punch (recipe coming soon), and grannies favorite holiday cookie - VIOLA - you have yourself a cookie exchange!

To inspire you, this is an amazing picture of cookies Jake took on Sunday. My good friend and fellow foodie Ray Dallago is the artist behind these treats. He made a ton of them, so I expect more next time we see him!

Chocolate Cinnamon Crinkle Cookies

Chocolate Cinnamon Crinkle Cookies

Ingredients:

·      1 ½ cups all-purpose flour
·      ¾ cup unsweetened cocoa powder
·      2 tsp. instant espresso powder
·      1 ½ tsp. baking powder
·      1 tsp. ground cinnamon
·      ½ tsp. ancho chili powder (optional)
·      ¼ tsp. salt
·      1 stick unsalted softened butter
·      1 ½ cups granulated sugar
·      2 eggs
·      1 tsp. vanilla extract
·      Powdered sugar

Method:

Sift together flour, cocoa, espresso powder, baking powder, cinnamon, chili powder, and salt in a mixing bowl.

Beat butter and sugar in large bowl until combined. Whisk together eggs and vanilla; add to butter mixture and beat until incorporated. Add flour mixture; mix on low speed until combined. Cover dough and chill for at least one hour.

Preheat oven to 350F; line baking sheets with parchment paper. Shape dough into 1-inch balls. Roll balls in powdered sugar two times, than arrange on prepared baking sheets, spaced 2 inches apart. Bake cookies until tops are cracked yet still soft, 10-11 minutes; DO NOT OVER BAKE! Let cookies cool on cookie sheets until set then remove to cooling rack.
