Wednesday... time to celebrate the hump!!!

In keeping with my philosophy that reaching Wednesday means we are half way to the weekend, AND a simple celebration is in order, here's this weeks easy to do and celebratory little dish...
Smoked Salmon Platter
Here's the list of ingredients:
  • Smoked Salmon
  • Cream Cheese - 1 package
  • 1 Lemon - cut in half and then thinly sliced
  • 1/2 Red Onion - minced
  • Capers
  • Finely Minced Chives
  • Pita Crackers (or crackers you enjoy)
And here's the method:
  1. Find a pretty plate/platter, spread the cream cheese on the bottom as a base.
  2. Separate the salmon into strips and space in rows on top of the cream cheese.
  3. Sprinkle the diced red onions between the rows of salmon.
  4. Scatter the capers over the top of the rows of salmon and diced onions.
  5. Arrange the thinly sliced lemons around the perimeter of the plate/platter.
  6. Finish with a light dusting of the finely minced chives.
This takes about 10 minutes to put together, is beautiful and tastes SO good. Enjoy this with a nice crisp bottle of white wine; if it were up to me, it'd be sparkling. To keep it affordable, I'd pick up a nice Cava Brut (Sparkling wine from Spain).
THE MOST IMPORTANT THING IS TO CELEBRATE HUMP DAY!!!
