One of my favorite ways to eat and entertain is small bites. The Mediterranean culture has had this figured out for centuries. I've catered SO many parties with this style of food. The basic theory behind a Meze is Small Bites - Bold Flavors. The juxtaposition of sweet/sour, cool/hot, mild/spicy, and soft/crisp is the foundation for planning a well executed Meze experience.
