Potato Omelet |
In honor of Meatless Monday... welcome Meze #6 - Spanish Potato Omelet.
Spanish Potato Omelets are very popular Meze dishes... SUPER easy to make, go with everything, and oh-so-tasty!
Here's what you do...
Method:
- Peal and thinly slice three potatoes
- Brush them with olive oil and lay flat on a baking sheet
- Sprinkle with a little kosher salt and pepper
- Roast in 375 oven for about 15 minutes
- Slice 1/2 white onion and saute with a touch of olive oil until soft and starting to caramelize
- Take a baking sheet and layer the potatoes with the onions (think Gratin)
- Mix 4 eggs, and pour mixed eggs over potatoes
- Bake in 375 oven for about 15 minutes or until potatoes are soft and omelet is set
