Potato Omelet from Spain - Meze #6

Potato Omelet
In honor of Meatless Monday... welcome Meze #6 - Spanish Potato Omelet. 

Spanish Potato Omelets are very popular Meze dishes... SUPER easy to make, go with everything, and oh-so-tasty!

Here's what you do...
Method:
  1. Peal and thinly slice three potatoes
  2. Brush them with olive oil and lay flat on a baking sheet 
  3. Sprinkle with a little kosher salt and pepper
  4. Roast in 375 oven for about 15 minutes
  5. Slice 1/2 white onion and saute with a touch of olive oil until soft and starting to caramelize
  6. Take a baking sheet and layer the potatoes with the onions (think Gratin)
  7. Mix 4 eggs, and pour mixed eggs over potatoes
  8. Bake in 375 oven for about 15 minutes or until potatoes are soft and omelet is set
The great thing about these (and why they are a common meze dish) is because they work both warm and room temperature. Simply cut them in squares and serve... 
Oh, and don't forget to serve with some Tzatziki and Harissa or chili paste...
To make this meal perfectly complete simply add in a nice salad..
And a crisp glass of white wine...
Voila - your meal is ready... HAPPY MEATLESS MONDAY!
