Happy Hump Day Appetizer...

Tuesday night special Hump Day post from last October... have you seen Patrick's Grilled Prosciutto-wrapped figs???

In keeping with my plan to offer something super easy to do on Wednesdays, I thought of one of my favorite appetizers. I then thought, this could be a simple indulgence on a Wednesday evening; something you could do to celebrate the beginning of the week's downhill slide - or save for an easy appetizer whenever you need one. Plus a nice bright Pinot Grigio is the perfect counter to the savory/sweet taste explosion these offer... or if you're more adventurous, a dry Fino Sherry.

Here's the step by step guide for making this SUPER easy appetizer...
Sherry soaked Calmyrna figs
Step One: Purchase a bag of dried figs... I prefer the lighter colored Calmyrna or Greek figs over the black Mission types (Trader Joe's is a good place to find these). Cut the figs in half and place cut side down in Sherry (dry or sweet sherry works depending on your preference). Allow figs to soak in sherry for about 10 minutes.

Step Two: Cut Manchego cheese into small cubes. When figs have finished soaking in Sherry, stuff a cube of Manchego in each fig half.
Prosciutto wrapped Figs
Step Three: Wrap each cheese stuffed fig half with prosciutto and secure with a toothpick. Quickly grill on BBQ until prosciutto starts to brown on the edges and the figs are heated through, remove from grill and enjoy!
