When we were at
Trader Joe's recently I picked up some beautiful small heirloom tomatoes. The next night I decided to to something fun and colorful with them...
 |
Pico de Gallo |
Let's talk about this in step-by-step detail...
I basically used what I had on hand:
- Tomatoes
- Red Onion
- Jalapeno
- Lemon/Lime Juice
- Garlic
- Cumin
- Coriander
- Oregano
- Salt to taste
Like most things I do, it was super simple, and since I used what I had, more could have been included - cilantro for instance, but this is what I had, so this is what I did...
 |
Chop some Red Onion |
 |
Juice some Lemon |
 |
Juice some Lime |
 |
Chop up some Jalapeno |
Of course the star of the show...
 |
Heirloom Tomatoes with a dose of Garlic |
And in typical Patrick fashion I threw in the chopped onions...
 |
Building my Pico |
And the chopped Jalapeno...
 |
Chopped Jalapeno |
Poured in the citrus juice...
 |
Lemon Juice Falls |
Finally, I dusted it with cumin, coriander, and oregano and a touch of kosher salt...
 |
Spices and Herbs |
I mixed it all up...
 |
Bringing the family together |
And Dinner became something very pretty - a taco salad with my pico and a great Woodworth
Golden Maggie (Rose of Merlot)...
 |
Dinner |
The Rose was the perfect bright, slightly sweet compliment to this vivid spicy salad.
