Almond JOY!!!

This is a quick and easy thing to prepare and keep in an air tight container tucked away for quick snacks... I am almost never without a batch of roasted almonds ready to pull out. This way when spontaneous things happen, like friends dropping by the Loft, I can pull out a piece of cheese, some crackers, and my roasted almonds...
Roasted Almonds
  1. Soak almonds in lemon juice for about 10 minutes
  2. Preheat oven to 425
  3. Toss soaked almonds with some kosher or sea salt, smoked paprika (or regular if you don't have smoked), a touch of cayenne if you like a little heat, and a drizzle of olive oil.
  4. Spread tossed almonds on baking sheet and roast in oven until they look roasted :-) I always start with about 9 minutes, then carefully watch them until they are done... they can burn quickly if you're not paying attention.
Having these around the house adds extra pizzazz when you put together your little spontaneous snacks... something like this...

And of  course wine is imperative...

Rosé
Rosé is a good choice - they are inexpensive and full of bright fruit, sometimes with floral accents, and the really dry options (as opposed to the more common off-dry options) can have tobacco and leather notes as well.  They are great pairing wines for savory foods, and they also love cheese boards and any sort of small savory bite. I mean after all -- they are a Tapas STAPLE in Spain!
