Phew, we made it through T-Day! Now it's on to all the other holidays... Hanukkah, Kwanza, Christmas, and any others I may have overlooked. But right now, a breather is in order... take the rest of this long, and long-awaited holiday weekend and chill a little. What better way than with an ever-so-slightly, less-than-ordinary, egg-themed breakfast... and you know my Mantra: SIMPLE-SIMPLE-SIMPLE...

Fried Eggs in a Tortilla |
I personally love fried eggs over easy. So, I had eggs (what self respecting foodie doesn't keep eggs in the fridge) and decided to do a fried egg sandwich using tortillas... I know, I know, Huevo Rancheros comes to mind, but this was more fried egg sandwich-ish!
This is what I did:
- Fried eggs over easy
- Placed them on a heated whole wheat tortilla
- Topped them with diced green onions, crumbled Cojita cheese, and some hot sauce
- Folded them like a taco and chowed
Just writing this makes me crave them again. I'm hoping that this blog will continue to inspire you to take the simplest, most basic things and create a little culinary art with them!

I must say, these were some of the best I've ever done, and my NEMESIS - a perfect pie crust, was defeated this year... mine turned out tender, flaky and DELISH...
