Sometimes you have to think outside the box...

A big bold red and what looks like a white wine dish - surely this is a mistake...
Risotto and Yalda
... NOT.

This risotto dish worked perfectly with the wine. I took a basic risotto recipe and added bacon, and paprika and other fun stuff - the creaminess countered the tannins in the wine and the bacon and spices played nicely with the structure of the wine - tomorrow's post will be a step-by-step entry on how to make this wonderful dish.
