Gramolata with Calamata Olives |
This is a very traditional accompaniment with lots of Mediterranean influenced cuisines. It's often used for the following list of things"
- Spoon on top of soup
- Sprinkle on Vegetables and Salads
- Use as a coating for frying fish
- Use as a base for serving skewers and kabobs
- Sprinkle on casseroles just before baking
- USE YOUR IMAGINATION!

You will need the following ingredients:
- Ghee (clarified butter)
- Pine Nuts
- Bread Crumbs
- Diced Calamata Olives
- Minced Chives
Here's the simple method...

Melt the Ghee over Med Heat |
Once Ghee is melted, add the pine nuts...

Toasting Pine Nuts |
Once pine nuts begin to toast, add bread crumbs

Let them toast for just a minute - be careful, they can burn easily.
Mince your calamata olives and have them ready...

Stir the olives into the toasted pine nut/bread crumb mixture...

And for your final step, stir in the minced chives, heat for just a minute and remove from heat.
