Meze #5 - Calamata Gramolata

I thought this would be perfect for Humpday... it's so freaking easy, and such a great accompaniment.

Gramolata...
Gramolata with Calamata Olives
This is a very traditional accompaniment with lots of Mediterranean influenced cuisines. It's often used for the following list of things"
  1. Spoon on top of soup
  2. Sprinkle on Vegetables and Salads
  3. Use as a coating for frying fish
  4. Use as a base for serving skewers and kabobs
  5. Sprinkle on casseroles just before baking
  6. USE YOUR IMAGINATION!

Here's now to make it...

You will need the following ingredients:
  • Ghee (clarified butter)
  • Pine Nuts
  • Bread Crumbs
  • Diced Calamata Olives
  • Minced Chives
Here's the simple method...
Melt the Ghee over Med Heat
Once Ghee is melted, add the pine nuts...
Toasting Pine Nuts
Once pine nuts begin to toast, add bread crumbs
Adding Bread Crumbs to Toasting Pine Nuts
Let them toast for just a minute - be careful, they can burn easily.

Mince your calamata olives and have them ready...

Stir the olives into the toasted pine nut/bread crumb mixture...
Stir in Calamata Olives
And for your final step, stir in the minced chives, heat for just a minute and remove from heat.
Final Step - Stir in the Chives
It's Easy Right?
