Chicken Souvlakia on Calamata Olive Gramalata |
This is one of my favorite Meze protein dishes... like all things Meze it's small bites, big flavors and OH-SO-EASY!
Let's look at the ingredients and break it down down down...
Chicken Souvlakia
Ingredients:
- 4 Skinless Chicken Breasts cut into filet strips
- 1/4 Cup Olive Oil
- Lemon Juice (approximately one lemon)
- 3 - 4 Tablespoons Honey
- 3 Tablespoons Stoney Mustard
- 2 Tablespoons Minced Sage
- 1 Tablespoon Paprika
- 3 Bay Leaves
- 2 Teaspoons Kosher Salt
And now for the Method...

Combine the olive oil, lemon juice, honey and mustard, then...

Adding Sage |
Add the sage and stir...

Mix it all up! |
Then finish with the paprika, bay leaves and Kosher salt...

Mix this up too! |
Add the trimmed chicken, make sure it's all covered and let it sit for at least an hour...

After the chicken has had a chance to marinate, heat your grill to medium-high and grill. Since the pieces are small, they will cook fast, WATCH THEM. There's nothing worse than dry, chewy, overcooked chicken... well there are probably other things worse, but for the sake of this post... DON'T OVER COOK THE CHICKEN...
